- 1 tablespoon ghee or coconut oil
- A few chopped almonds or pistachios for garnish
- Instructions
- Roast the Foxnuts: Heat the ghee or coconut oil in a heavy-bottomed pan on medium heat. Add the foxnuts and dry roast for 3-4 minutes, stirring continuously, until they are golden and crunchy. This step is crucial for giving the kheer a wonderful nutty flavor and aroma.
- Crush the Makhana: Once roasted, let the foxnuts cool slightly. Reserve a handful for garnish and gently crush the rest using a rolling pin or pulse them a few times in a blender. You want a coarse, uneven texture, not a fine powder.
- Simmer the Milk: In the same pan, pour in the milk and bring it to a gentle boil. Add the saffron strands (if using) and let them infuse for a minute.
- Combine & Cook: Add the crushed foxnuts to the simmering milk. Stir well and lower the heat. Let it simmer for 5-7 minutes, stirring occasionally, until the mixture thickens and the foxnuts become soft.
- Sweeten & Flavor: Turn off the heat. Stir in the Lakanto Monk Fruit Sweetener and the cardamom powder. Mixing the sweetener after turning off the heat ensures it dissolves perfectly without any risk of crystallization. Taste and add more sweetener if you prefer.
- Garnish & Serve: Pour the kheer into serving bowls. Garnish with the reserved whole foxnuts and a sprinkle of chopped nuts like almonds or pistachios. You can serve it warm or chilled, it tastes delicious either way!
